Celebrate the Lunar New Year with Din Tai Fung!

Yu Sheng!

Din Tai Fung 鼎泰豐 – a name that almost every household is familiar with. The well-known Michelin-starred Chinese restaurant that originates from Taiwan is arguably the most successful Chinese chain restaurant in Singapore and even in some other countries. David and I have been such huge fans of Din Tai Fung that we patron the restaurant almost every other week for the authentic taste of Taiwan. We also made sure to check in to the Michelin-starred Din Tai Fung restaurants in both Hong Kong and Taiwan on our trips there. We were thrilled to be invited to attend the Lunar New Year tasting by Din Tai Fung at the Paragon flagship store.

Even though we frequently patron Din Tai Fung, we have been sticking to the usual dishes during every single visit. We love their popular dishes like Braised Beef Noodles, Fried Rice with Shrimps & Egg, Fried Rice with Shredded Pork & Egg, Crispy Golden Prawn Pancake, Oriental Wantons with Black Vinegar and Chili Oil and of course, the signature Xiao Long Bao! Despite being a loyal fan of Din Tai Fung, I’m guilty to say that there are quite a few dishes that I’m trying for the first time tonight!

We were introduced to a wide variety of dishes including the festive specials like Prosperity Smoked Salmon Yu Sheng and Steamed Layered Red Date Cake in conjunction with the upcoming Lunar New Year.

Din Tai Fung – Prosperity Smoked Salmon Yu Sheng 发财鱼生

Kick off your Lunar New Year celebration with the popular Prosperity Smoked Salmon Yu Sheng (发财鱼生) at Din Tai Fung! The Lohei (Prosperity Toss) session is always enjoyable with the waiter/waitress wishing you auspicious blessings as they pour the ingredients onto the plate. The classic Prosperity Smoked Salmon Yu Sheng at Din Tai Dung includes Norwegian smoked salmon, crispy yam strips, twirls of white radish and carrots, fresh pomelo pulp and Tianjin roasted chestnuts. The colourful dish is then topped with a sweet and tangy plum sauce.

The combination of the ingredients gives the dish a refreshing and satisfying taste. The crunchy yam strips add an additional kick to the dish and the sweet and sour sauce is so well balanced, making the dish a perfect appetizer.

In addition to the ingredients included, you may choose to add more flavours to your Yu Sheng with the top-up choices. The top-up options include Pine Nuts (S$2.80), tender Smoked Unagi (S$9.80) and Fried Salmon Skin (S$4.80). I highly recommend the crispy Fried Salmon Skin and the flavourful Smoked Unagi to be added to your Yu Sheng. We had the Yu Sheng with all the top-ups added and it tastes fantastic!

The smooth and chewy cake is made of imported premium red dates with natural sweetness. The fragrance of the red dates is so overwhelming yet not too sweet.

Din Tai Fung-YamSpringRolls

Yam paste wrapped in Crispy Spring Roll 酥脆芋泥卷

The Yam paste wrapped in Crispy Spring Roll (S$6.60) is one of my favourites among all of the dishes. This is our first time trying the dish which is only exclusively available at the Paragon Shopping Mall restaurant and we were pleasantly surprised. The spring roll skin is deep fried to crispy and it tastes heavenly good with the yam paste within when served hot. This is also another vegetarian-friendly dish!

Din Tai Fung-DeepFriedHandmadeTofu

Deep Fried Handmade Tofu with Water Chestnuts & Mushrooms 酥炸素豆腐

Here’s another recommended dish that is only available at Paragon flagship store only. The vegetarian-friendly Deep Fried Handmade Tofu with Water Chestnuts & Mushrooms (S$8.60) is soft and tender, coated with golden crispy outer layer. The fragrance of the assorted vegetables like mushrooms and water chestnuts adds a flavourful twist to the tofu. The chili sauce served alongside also gives an additional kick to the dish.

Din Tai Fung-TruffleXiaoLongBao

Din Tai Fung – Steamed Truffle & Pork Dumplings 松露小笼包

Xiao Long Bao is one of the must-eat items at Din Tai Fung. Other than the classic award-winning Xiao Long Bao, various renditions of Xiao Long Bao have been introduced to Din Tai Fung’s menu. The premium Steamed Truffle & Pork Dumplings (S$5 per piece) is basically the Xiao Long Bao on steroids! Enjoy the strong flavours of black truffle within the delicate skin together with the fragrant pork filling as you deliver it into your mouth. Not forgetting the rich broth contained within, which is the crucial element that makes Din Tai Fung’s Xiao Long Bao so addictive.

Din Tai Fung-PrawnPancake

Din Tai Fung – Crispy Golden Prawn Pancake 酥脆腐皮虾饼

Do you know that this Crispy Golden Prawn Pancake (S$9.30) is only available in Singapore? We were so surprised to learn about this after having this delightful dish so many times! If you haven’t tried this, please do try the pancake out the next time you visit Din Tai Fung. You can never go wrong with this one. The inner part of the pancake tastes pretty much like fish cake but with accompanied with some fresh prawn within. The pancake is covered with a thin, crispy layer of beancurd skin deep fried to perfection.

Din Tai Fung-CustardBuns1

Din Tai Fung – Steamed Custard Buns 流沙包

Custard buns are nothing new in Chinese restaurants menu. But Din Tai Fung’s rendition still manages to stand out from all the others. We were caught completely by surprise by the amount of the beautiful golden lava bursting from the buns! The filling in the Steamed Custard Buns (S$5.80) has a well-balanced sweet and savoury flavour with a rich and smooth texture.

You may also want to have some appetizers and vegetables to go along with the main dishes. The Oriental Salad in Special Vinegar Dressing 小菜 (S$4.50) and Black Fungus with Ginger Strips & Vinegar Dressing 姜丝云耳 (S$5.50) are pretty light and refreshing. The Stir-fried Dou Miao 蒜炒豆苗 with Garlic (S$12.80) is also one of the most popular greens available at Din Tai Fung.
